Summary
Prepare, season, and cook for hospital patients, cafe customers and catered events. Work under the leadership of culinary professionals. Working in a flexible team environment. Using a variety of cooking/culinary techniques (grill, cold prep, batch cookery, proper scaling of recipes.) Knowledge of buffalo chopper, slicer, combi oven, range, kettles, grinder, char broiler, turbo chef and flat top.
Key Responsibilities
- A true scratch kitchen.
- Execute daily chef specials for the Constitution Café.
- Creative recipe development that change seasonally.
- Utilizing Anti biotic meats and local produce when in season.
- Menu and food production sheets are reviewed to determine type and quantity of meals, vegetables and soups to be prepared.
- Standardized recipes are properly scaled and executed with recording of waste.
- Washing, trimming, cooking and seasoning of food items adheres to production sheets and salad bar production.
- Sanitation and cleaning assignments are completed as instructed.
- Food preparation, sanitation, and safety standards are maintained and improved to achieve department goals.
- Participating in pre-meals in the café.
- Planning of utilization of Roof top Garden produce.
- Additional department, organization, or network activities are completed per established objectives.
- Performs other duties as assigned.
- Servicing the needs of the patient trayline.
- Supports First cooks with daily production needs.
- Communicates product needs, recipe adjustments and production process to the first cook and Executive Chef.

Qualifications Qualifications and ExperienceEducation/DegreeRequired

- High School Degree or GED preferred
- Have Serv Safe certificate or obtain in the first year of employment.
ExperienceRequired

- 3-5 years experience in hospital, institutional, hotel and/or restaurant hot and cold food preparation preferred.

- Computer proficiency required. Microsoft office applications preferred with ability to learn new software
